Golden Carrot Muffins

Just as ‘Golden Milk’ offers all the anti-inflammatory, cancer fighting, liver detoxing, hormone balancing benefits of turmeric, these muffins do just that in a delicious, grain and dairy-free mouthful!

 

What It’s Gonna Take: (makes 12 muffins)

  • 2 eggs
  • 1 1/2 cups shredded carrot
  • 1 1/2 cup almond flour
  • 1/2 cup raisins
  • 1/3 cup unsweetened applesauce
  • 1/4 cup syrup
  • 1 teaspoon cinnamon
  • 3/4 teaspoon turmeric
  • 1/2 teaspoon apple pie spice (Primal Palate)
  • dash of salt & pepper

 

How to Proceed:

  1. Preheat oven to 350 degrees
  2. Coat muffin tins with coconut oil, butter, ghee or muffin liners
  3. Mix all wet ingredients in a large bowl and set aside
  4. Mix all dry ingredients in small bowl
  5. Combine dry ingredients into large wet bowl
  6. Fill muffin tins
  7. Bake @ 350 degrees for 20-25 minutes
  8. Cool & Enjoy!
