Coconut Flakes…Fatty, not Frosted!

This is my version of a breakfast cereal…it’s not too hot, and not too cold…it’s JUST RIGHT! Best of all, it’s quick and easy to make and can be stored easily if you want to prep it ahead of time!

What it’s gonna take: (single serving)

  • 1/2 Cup Coconut Flakes
  • 1 teaspoon Coconut Oil
  • 1 Tablespoon Almond Butter
  • 1 Teaspoon Cacao Powder
  • Cinnamon to taste
  • Salt to taste
  • Protein Powder (optional)
  • 2 oz. Baked Sweet Potato Chips (optional for higher carbohydrates)

How to proceed:

  1. Preheat oven to 350 degrees
  2. Line baking sheet coconut flakes (optional to place on parchment paper for easy cleaning purposes)
  3. Bake coconut flakes for roughly 5 minutes (or until desired golden browning is reached)
  4. In serving bowl combine all other ingredients (protein powder optional)
  5. Combine baked flakes and mix (result should be a cacao and cinnamon dusted bowl of luscious flakes)
  6. Consume immediately warm OR cool and consume when firmed into a ‘granola-ish’ consistency
  7. Mix it Up!
